Sure they could go the route of "we farm only what our prey needs to eat, and then farm our prey and destroy everything else", but I think that's underselling their value. Rather than the traditional view of carnivores as vicious warriors who would eat you as soon as converse, I feel like a purely carnivore race would be, or could be, very nature oriented. I could see sentient carnivore races living on planets with life bursting at the seems, they carefully tending forests and wild lands in order to keep their prey items happy and healthy. I imagine sentient carnivores would likely work the same (humans excluded, as we are omnivores). Like when wolves were added to Yellowstone, the ecosystem stabilised, not collapsed. This means predators need thriving ecosystems to themselves thrive. They may have a favorite prey item, but they will take what they can get. Most apex predators have a varied diet, and rarely hunt only one thing. Generally, we consider carnivore races to be these greedy, evil species that exploit planets, consuming all life and moving on, but I feel like this wouldn't be true, at least for most apex predators races. There's more about them I won't spoil, but suffice it to say it got me thinking. But still, only one or two crops are grown, because like their herbivores ancestors they ate specific things, and they needed those things to support a massive population. They breed out of control, and their entire planets are covered as far as the eye can see in green roof structures, used for farming. They then began killing off any other species competing for resources. When they became sentient, they killed off their predators. And one interesting thing observed from their planets is a supreme lack of biodiversity. They were a sentient race descended from herbivores. The teddy bear cows, (named because of the resemblance to teddy bears and cows.). I recently read the lost fleet series, by Jack Campbell, and he wrote about various alien races.
